Mini Flourless Chocolate Cakes

Ingredients Required: 
  1. Cocoa powder 
  2. One cup sugar 
  3. Five eggs 
  4. One cup of softened unsalted butter and cut up (no substitutes) 
  5. Six ounces of good-quality melted bittersweet chocolate 
  6. 1/3 cup of Kahlua or coffee liqueur 
  7. One teaspoon of vanilla 
  8. Three ounces of good-quality chopped bittersweet chocolate 
  9. 1/3 cup of whipping cream 
  10. Fresh raspberries, for garnish 
  11. Unsweetened whipped cream (optional)
Directions to Prepare: 

Step 1: Firstly, preheat the oven to 350 degrees F. If you wanted to unmold the cakes, you need to grease the 9 6-ounce custard cups and then line the cups bottoms with waxed paper and grease the waxed paper. Inside of the cups, you need to dust using the cocoa powder.

Step 2:. Beat the eggs as well as sugar in a large bowl using a electric mixer on medium to high speed for about 5 to 7 minutes or till the mixture becomes thick. Later decrease the speed to medium; liqueur and butter needs to be beat until they are blended which would look curdled and that is okay. Next, you need to beat in 6 ounces of the melted chocolate as well as the vanilla well till they get combined. Step 4: Take the 10 inch pie plate and pour the mixture evenly on it and also pour the batter over the fruit completely covering it. Remaining one table spoon of granulated sugar and 1/8 teaspoon of cinnamon needs to be combined next and sprinkled on batter.

Step 5: Finally, bake the cake in the oven for 55 to 60 minutes i.e., till the cake is successfully tested with a toothpick and the fruit in it bubbles all around the edges. You can serve the cake at room temperature or when it is warm.
